Popped Quinoa and Amaranth (Kiwicha)

A nutritious snack, quinoa and amaranth are high-protein grains that can be popped similar to popcorn.

Instructions

  1. Heat a large skillet over medium-high heat.

  2. If quinoa is not prewashed, rinse thoroughly and dry.

  3. Optionally add 1/2 teaspoon vegetable oil, then add about 1/4 cup of grain to form a single layer in the skillet.

  4. Stir grains continuously as they pop; amaranth turns white, while quinoa becomes toasted brown.

  5. Once most grains have popped, or quinoa is golden brown, remove from heat and transfer to a plate to cool.

  6. Pop remaining grains in batches.

  7. Toss all popped grains with salt and serve.
