Popped Quinoa and Amaranth (Kiwicha)
A nutritious snack, quinoa and amaranth are high-protein grains that can be popped similar to popcorn.

Instructions

Heat a large skillet over medium-high heat.

If quinoa is not prewashed, rinse thoroughly and dry.

Optionally add 1/2 teaspoon vegetable oil, then add about 1/4 cup of grain to form a single layer in the skillet.

Stir grains continuously as they pop; amaranth turns white, while quinoa becomes toasted brown.

Once most grains have popped, or quinoa is golden brown, remove from heat and transfer to a plate to cool.

Pop remaining grains in batches.

Toss all popped grains with salt and serve.
