Instructions

  1. Start boiling 10 quarts of water in a large pot, then reduce it to a slow simmer.

  2. Soak tamarind pods and fresh tejocotes in very hot water for an hour; skip soaking if tejocotes are frozen or canned.

  3. Remove tamarind shells, squeeze out seeds from the pulp, quarter tejocotes, and remove their skin, then discard the soaking water.

  4. Add the prepared tamarind pulp, tejocotes, quartered guavas, piloncillo, prunes, pears, orange juice, apple, walnuts, cinnamon, and cloves to the simmering water.

  5. Chop sugar cane into chunks, removing any tough outer layer, and add it to the pot.

  6. Simmer uncovered for about an hour, stirring occasionally.

  7. Remove cinnamon sticks, then ladle the hot liquid and fruit chunks into mugs, providing spoons for the fruit.
