Polish Wilted Lettuce Salad (Salata z Boczkiem)

Instructions

Place lettuce in a heatproof bowl.

Fry bacon until half cooked, then add onion and continue frying until bacon is crisp.

Drain all but 1/4 cup bacon grease from the skillet, then add water, vinegar, and sugar; bring to a boil, stirring to dissolve the sugar.

Pour the hot vinaigrette over the lettuce, season with salt and pepper, then toss to coat and wilt before serving.
