Polish Wafle Wafer Cookies

Instructions

  1. Cream egg yolks and confectioner's sugar until light.

  2. Stir 4 ounces of clarified butter and vanilla extract into the mixture.

  3. Beat in flour until a thick, pourable batter forms; thin with half and half if needed.

  4. Whip egg whites to soft peaks, then fold into the batter.

  5. Heat a wafer iron on medium, brush with butter, and add enough batter to cover.

  6. Close the iron, cook for 90 seconds, flip, and cook for another 90 seconds.

  7. Remove cookies to cool; repeat for all batter. Serve or store covered.
