Polish Tripe Soup Recipe

Instructions

  1. Rinse tripe thoroughly under cold water, rub with salt to clean crevices, then rinse again.

  2. Place the cleaned tripe and soup bones in a large pot, cover with water, and add 1/2 teaspoon salt per cup of water. Bring to a boil, then reduce heat and simmer partially covered for 3-5 hours until the tripe is tender.

  3. Drain the tripe and bones; pick off and reserve any meat from the bones, then discard the bones.

  4. Once the tripe is cool enough, slice it into very thin strips.

  5. Combine sliced tripe, reserved meat, carrots, celery root, parsley, and broth in a clean pot. Bring to a boil, then reduce heat and simmer partially covered until the vegetables are tender.

  6. Stir in 1/2 teaspoon salt, optional ginger and mace, marjoram, and pepper to taste.

  7. Return to a boil and simmer for 10 minutes, adjusting seasonings as needed.

  8. Serve hot with rye bread.
