Instructions
-
Rinse tripe thoroughly under cold water, rub with salt to clean crevices, then rinse again.
-
Place the cleaned tripe and soup bones in a large pot, cover with water, and add 1/2 teaspoon salt per cup of water. Bring to a boil, then reduce heat and simmer partially covered for 3-5 hours until the tripe is tender.
-
Drain the tripe and bones; pick off and reserve any meat from the bones, then discard the bones.
-
Once the tripe is cool enough, slice it into very thin strips.
-
Combine sliced tripe, reserved meat, carrots, celery root, parsley, and broth in a clean pot. Bring to a boil, then reduce heat and simmer partially covered until the vegetables are tender.
-
Stir in 1/2 teaspoon salt, optional ginger and mace, marjoram, and pepper to taste.
-
Return to a boil and simmer for 10 minutes, adjusting seasonings as needed.
-
Serve hot with rye bread.
