Polish Strawberry Kissel

Instructions

Bring 1 cup of water and sugar to a boil in a saucepan, then remove it from heat.

Dissolve potato starch in 1/2 cup cold water and stir into the sugar-water mixture; return to heat and boil, stirring constantly.

Stir in strawberries.

Pour into cold-rinsed dessert bowls and refrigerate for approximately 3 hours until firm.

Serve chilled, with an optional topping of cream or whipped cream.
