Instructions

  1. Combine ground or finely chopped beef tenderloin, mustard, olive oil, pasteurized egg yolk, parsley, salt, and pepper in a bowl.

  2. Form the mixture into a mound on a serving plate.

  3. Create a center indentation and place a pasteurized egg yolk within it.

  4. Arrange chopped onion, pickles, capers, and anchovies around the tartare.

  5. Serve immediately, optionally with toast points.
