Polish Roast Duck With Apples
A traditional Polish roast duck with apples, known as Kaczka Pieczona z Jabłkami, offers a decadent yet simple alternative to roast chicken.

Instructions

Preheat oven to 475 F (240 C). Pat the duck dry.

Stuff the duck cavity with apple chunks, then rub the skin with marjoram, garlic, salt, and pepper. Marinate for 45 minutes.

Place the duck in a roasting tray. Combine remaining marinade with water to make 1 cup of liquid, then pour it around the duck.

Roast uncovered for 10 minutes, then reduce heat to 325 F (162 C) and bake for 2 hours. Every 30 minutes, pierce the skin and baste with pan liquid.

With 1 hour remaining for the duck, cut unpeeled potatoes into halves or quarters, salt them, and add to the tray with caraway seeds. Turn and baste the potatoes when basting the duck, adding more caraway seeds if desired.

Serve the duck in chunks when easily pulled apart.
