Polish Rhubarb Honey Drink

Instructions

  1. Start boiling 4 cups water, then remove from heat, stir in honey, and set aside to cool.

  2. Process chopped rhubarb until it forms a pulp.

  3. Place rhubarb pulp in a bowl, pour 3 cups hot water over it, cover, and refrigerate for 2 hours once cool enough to handle.

  4. Strain the chilled rhubarb liquid into the cooled honey-water, stir to combine, and pour into a pitcher.

  5. Serve the drink over ice, optionally garnished with an orange slice or mint sprig.
