Polish Potato Salad (Sałatka Kartofli)

A classic Polish potato salad, also known as salatka kartofli, features finely diced potatoes and mixed vegetables coated in a rich mayonnaise dressing.

Instructions

  1. Cook potatoes in their skins; cool, peel, and dice them into 1/4-inch pieces.

  2. In a large bowl, combine the diced potatoes with carrots, celery, pickle, onion, salt, and pepper.

  3. In a separate small bowl, mix mayonnaise with up to 4 teaspoons of sugar, then gently fold this dressing into the potato mixture until all ingredients are coated.

  4. Cover and chill the salad until serving.
