Instructions

  1. Combine 6 peeled and finely grated medium potatoes, 1 finely grated medium onion, 2 large eggs, 2 teaspoons kosher salt, and black pepper in a large bowl.

  2. Stir in 1/4 cup all-purpose flour to bind the mixture.

  3. Heat 1/4-inch of vegetable oil in a large skillet over medium-high heat until hot.

  4. Drop 1/4 cup of potato mixture into the skillet, spreading it into a 3-inch, 1/4-inch thick circle.

  5. Fry for 3 to 5 minutes until the bottom is brown; reduce heat if necessary to prevent burning.

  6. Flip and fry the other side for 3 to 5 minutes until golden brown and crisp.

  7. Drain on paper towels.

  8. Serve optionally with granulated sugar, sour cream, and applesauce.
