Polish Pork Ribs and Sauerkraut (Żeberka Wieprzowe)

Instructions

  1. Preheat oven to 450 F. Pat pork ribs dry, then rub with garlic, salt, and pepper.

  2. Place ribs meaty-side down in a shallow roasting pan and roast uncovered for 20 minutes.

  3. Reduce oven temperature to 250 F. Remove pan and turn ribs meaty-side up.

  4. Combine sauerkraut, applesauce, brown sugar, and caraway seeds in a large bowl.

  5. Pour the sauerkraut mix over the pork ribs. Cover the roasting pan and bake 1 1/2 to 2 hours until the meat is tender and reaches 145 F.

  6. Remove from oven and serve hot.
