Polish Pork Lard Spread (Smalec)

Instructions

  1. Grind diced pork fat, then fry in a large skillet until transparent.

  2. Sauté onion, garlic, and bacon with the rendered fat until bacon is golden brown.

  3. Stir in apples and season with optional marjoram, pepper, and salt, adjusting for bacon's saltiness.

  4. Transfer to a heatproof container; allow to solidify at room temperature, then refrigerate for up to two weeks.

  5. Serve on rye bread with sliced onion and pickles.
