Polish Plum Butter (Powidla Sliwkowe)

A simple Polish-style plum butter, or powidla sliwkowe, is prepared with just two ingredients: plums and sugar.

Instructions

  1. Begin boiling water for the canning water bath.

  2. In a small saucepan, bring plums to a boil, then reduce heat and simmer, stirring, until completely broken down and tender.

  3. Stir in sugar to taste; continue cooking and stirring until the butter is thick enough to not immediately drop from an upside-down spoon.

  4. Fill hot sterilized jars with the hot plum butter, leaving 1/4-inch headspace, then cover with sterilized lids and rings.

  5. Process the sealed jars in the boiling water bath for 10 minutes.

  6. Remove and cool the jars on the counter before storing.
