Instructions
-
Preheat the oven to 300 F.
-
In a large bowl, combine sugar and butter. Scald milk, then pour over the mixture; stir until the butter melts and the mixture cools to 110 F.
-
Add yeast and mix thoroughly.
-
Stir in the egg-salt mixture and half of the flour.
-
Mix in vanilla and optional raisins.
-
Add the remaining flour and mix until the dough is sticky.
-
Transfer the dough to a greased bowl, cover, and let rise until doubled.
-
Grease two 9x5-inch loaf pans. Prepare the crumb topping by combining flour and sugar in a medium bowl, then cutting in butter.
-
Punch down the dough, divide it in half, and place into the prepared pans. Sprinkle each with half of the crumb topping.
-
Cover the pans and let the dough rise until it mounds slightly over the tops.
-
Bake for 50 minutes, or until an internal temperature of 190 F is reached.
-
Cool the cakes in the pans for 5 minutes, then transfer them to a wire rack to cool completely.
