Instructions

  1. Preheat the oven to 300 F.

  2. In a large bowl, combine sugar and butter. Scald milk, then pour over the mixture; stir until the butter melts and the mixture cools to 110 F.

  3. Add yeast and mix thoroughly.

  4. Stir in the egg-salt mixture and half of the flour.

  5. Mix in vanilla and optional raisins.

  6. Add the remaining flour and mix until the dough is sticky.

  7. Transfer the dough to a greased bowl, cover, and let rise until doubled.

  8. Grease two 9x5-inch loaf pans. Prepare the crumb topping by combining flour and sugar in a medium bowl, then cutting in butter.

  9. Punch down the dough, divide it in half, and place into the prepared pans. Sprinkle each with half of the crumb topping.

  10. Cover the pans and let the dough rise until it mounds slightly over the tops.

  11. Bake for 50 minutes, or until an internal temperature of 190 F is reached.

  12. Cool the cakes in the pans for 5 minutes, then transfer them to a wire rack to cool completely.
