Polish Pineapple Crumb Cake (Placek z Ananas y Kruszonka) Recipe

A moist Polish pineapple crumb cake, also known as placek z ananasem i kruszonka, features a coffee cake-like consistency with fresh fruit.

Instructions

  1. Preheat oven to 350 F and coat a 9-inch square pan with cooking spray.

  2. Cream 4 ounces butter and 2/3 cup sugar until fluffy. Beat in one whole egg and egg yolks one at a time, then add vanilla and beat for 30 seconds. Mix in sour cream until blended.

  3. In a separate bowl, combine 1 1/4 cups flour, baking powder, baking soda, and salt. Add this flour mixture to the wet batter; beat on low for 30 seconds, then on medium for 1 minute.

  4. Pour batter into the prepared pan. Arrange pineapple half-rings on top, then sprinkle with crumb topping. Bake on a baking sheet for 50-55 minutes, or until a toothpick comes out clean.

  5. Cool in the pan for 30 minutes before cutting and serving.
