Start boiling a large saucepan of salted water.

Combine mashed potatoes, egg, salt, and flour to form a smooth dough, avoiding overworking.

On a floured surface, roll dough into 1/2-inch cylinders and cut into 1 to 1 1/2-inch angled pieces.

Drop dumplings into boiling water in batches.

Simmer for 1 to 5 minutes until done, then transfer to a colander and drain.

For a polonaise topping, melt butter, add breadcrumbs, and fry until golden.
