Instructions

  1. Preheat the oven to 375 F.

  2. Cream 8 ounces softened butter with superfine sugar until light and fluffy.

  3. Beat in the egg, lemon juice, lemon zest, and flour until fully combined.

  4. Scoop 1-inch portions of dough onto parchment-lined pans, spacing 2 inches apart. Lightly flatten each with a flour-dipped glass.

  5. Bake for 8-10 minutes until edges are lightly browned. Cool on pans for 5 minutes, then transfer to a wire rack to cool completely.

  6. For the filling, cream softened butter with confectioners' sugar, lemon juice, and zest until thick and smooth, adding milk one tablespoon at a time if needed.

  7. Pipe or spread filling onto the flat side of one cookie, then top with another flat-side down, twisting gently to secure.

  8. Dust assembled cookies with confectioners' sugar.
