Polish Lazy Dumplings (Leniwe Pierogi)

Polish Leniwe Pierogi are easy-to-make, unfilled dumplings formed by hand-rolling the dough.

Instructions

  1. Start boiling a large pot of salted water.

  2. Process cheese, eggs, egg yolk, salt, and butter in a food processor until smooth, then add flour and process until combined; the dough will be sticky.

  3. Transfer dough to a floured surface, form into a 1 1/2-inch-thick rope, and cut diagonally into 1- or 2-inch pieces.

  4. Drop dumplings into boiling water; cook for about 10 minutes total, or 5 minutes after they rise to the top, then taste test one for doneness.

  5. Remove cooked dumplings with a slotted spoon to a buttered bowl and serve immediately with sour cream, or fry them in butter until golden.
