Instructions

  1. Preheat the oven to 350 F.

  2. Beat 8 ounces room temperature cream cheese with 1 1/2 cups room temperature salted butter until fluffy.

  3. Gradually mix in 3 cups all-purpose flour.

  4. Wrap the dough and refrigerate for at least 1 hour.

  5. On a surface dusted with equal parts confectioners' and granulated sugars, roll dough into a 12 x 18-inch, 1/4-inch thick rectangle.

  6. Cut into 2-inch squares.

  7. Place 1/2 to 1 teaspoon filling in the center of each square; brush one corner with egg white, then press the opposite corner onto it to seal.

  8. Transfer filled cookies to a parchment-lined sheet pan and bake for 15 minutes or until corners brown.

  9. Remove cookies to a wire rack to cool completely, then dust with confectioners’ sugar.
