Polish Kołaczki
Polish cream cheese cookies are flaky pastries filled with fruit, cheese, nut, or poppy seed pastes, requiring only 30 minutes of preparation.

Instructions

Preheat the oven to 350 F.

Beat 8 ounces room temperature cream cheese with 1 1/2 cups room temperature salted butter until fluffy.

Gradually mix in 3 cups all-purpose flour.

Wrap the dough and refrigerate for at least 1 hour.

On a surface dusted with equal parts confectioners' and granulated sugars, roll dough into a 12 x 18-inch, 1/4-inch thick rectangle.

Cut into 2-inch squares.

Place 1/2 to 1 teaspoon filling in the center of each square; brush one corner with egg white, then press the opposite corner onto it to seal.

Transfer filled cookies to a parchment-lined sheet pan and bake for 15 minutes or until corners brown.

Remove cookies to a wire rack to cool completely, then dust with confectioners’ sugar.
