Instructions

  1. Start boiling salted water for cooking.

  2. Combine flour, salt, eggs, and water to form a dough in a mixer or by hand.

  3. Knead the dough for 5 to 8 minutes until smooth and elastic; cover and let rest for 30 minutes.

  4. Roll the dough thinly on a floured surface and let it air dry for 30 minutes.

  5. Slice the dough into 1/8 to 1/4-inch wide noodles.

  6. Scatter the noodles on a floured surface to dry for another 30 minutes.

  7. Cook the noodles in the boiling water for 5 to 10 minutes, then drain.

  8. Ensure noodles are completely dry before storing for later use.
