Polish Ham Hocks With Beer-Honey Glaze (Golonka)

Instructions

  1. Preheat the oven to 375 F.

  2. Rinse pork hocks and place them in a large lidded pot, then cover with several inches of water.

  3. Bring water to a boil over high heat, skimming any foam that rises to the surface.

  4. Add salt and remaining ingredients, return to a boil, then reduce heat to a simmer. Cook covered for 1.5 to 3 hours until the meat is fork-tender.

  5. Remove hocks from the pot, reserving 2 tablespoons of cooking liquid for the glaze, and arrange them in a baking pan.

  6. Prepare the glaze by combining 0.5 to 1 can of beer, 2 to 4 tablespoons of honey, and the 2 tablespoons of reserved liquid in a small saucepan; heat and stir until the honey dissolves.

  7. Pour the glaze over the hocks in the baking pan. Bake for 30 to 45 minutes, basting periodically, until the meat is fully tender and glazed.
