Instructions

  1. Rinse and pat dry 1 pound white fish fillets. Season with 3 dashes salt and 3 dashes black pepper.

  2. Dredge the fish in 1/2 cup all-purpose flour. Sauté in 2 tablespoons oil until golden brown and cooked, then drain on paper towels.

  3. In a large skillet, heat 2 tablespoons oil over medium. Add 2 grated carrots, 1 grated celery rib, 1 grated parsnip, and 1 sliced leek; sauté until vegetables soften.

  4. Stir in 6 allspice berries, 1 bay leaf, and 4 tablespoons tomato paste. Simmer until vegetables are tender and most liquid evaporates.

  5. Remove the bay leaf and allspice, then season to taste with salt and pepper.

  6. Spread one-third of the tomato-vegetable mixture on a serving platter. Arrange the fried fish on top, then cover with the remaining vegetable mixture. Serve hot or cold.
