Polish Crab-Stuffed Salmon Pinwheels

A classic Polish dish, zrazy łosos i krab are crab-stuffed salmon pinwheels typical of Baltic Sea cuisine.

Instructions

  1. Sauté onions and celery in butter until translucent, then cool and transfer to a bowl.

  2. Mix in lemon juice, crabmeat, breadcrumbs, egg, and dill.

  3. Cut salmon into two lengthwise pieces and season with salt and pepper.

  4. Divide stuffing and spread on the darker side of each salmon piece.

  5. Roll salmon into cylinders, secure with toothpicks if needed, and refrigerate for 1 hour.

  6. Preheat oven to 400 F.

  7. Slice each salmon roll into 1 1/2- to 2-inch portions.

  8. Coat a baking dish, place pinwheels cut-side down, pour wine around them, and brush with butter.

  9. Cover with foil and bake for 15 to 20 minutes until flaky. Serve.
