Polish Chruściki (Angel Wings)

Instructions

  1. Heat 2 inches of oil in a deep skillet to 350 F.

  2. Combine egg yolks, one whole egg, and salt in a mixer; beat at high speed for 5 minutes until thick and lemon-colored.

  3. Beat in confectioners' sugar, cream, vanilla, and rum, then add flour and beat for 5 minutes until dough comes together.

  4. Transfer dough to a floured board, divide in half, cover, and rest for 20 minutes.

  5. Working with one half of the dough, roll it out to 1/8-inch thickness, then cut into 2-inch-wide strips, followed by diagonal cuts at 4-inch intervals.

  6. Slit the center of each dough strip and pull one end through to form a bow shape.

  7. Fry six chruściki at a time for less than 1 minute per side until golden, then drain on paper towels.

  8. Dust with confectioners' sugar and optionally drizzle with honey before serving.
