Preheat the oven to 375 F. Combine yeast with 1 teaspoon sugar and 1/4 cup warm water; set aside.

In a large bowl, mix 1 cup warm milk, butter, 1.4 ounces sugar, and a pinch of salt until dissolved. Stir in eggs and the yeast mixture.

Add flour and beat until incorporated; the dough will be sticky. Scrape down the bowl, cover, and let rise until doubled.

Punch down dough and turn onto a lightly floured surface. Knead a few minutes to remove air. Divide into 2-ounce portions.

Round each portion into a ball using floured hands. Arrange on a parchment-lined sheet, 2 inches apart, cover, and let rise again until doubled.

Create a depression in each dough ball with a lightly floured soup ladle bottom. Place filling in each depression, adding crumb topping if using. Cover and let rise 30 minutes.

Whisk 1 large egg with 1 teaspoon of water; brush this around the sides of each roll.

Bake for 15 to 20 minutes until done. Cool on a wire rack. Optionally, dust with confectioners' sugar or drizzle with water icing once cooled.
