Instructions

  1. Spread mustard on each steak, layer with pickles, ham, and onion. Fold the sides, roll tightly, and secure with a toothpick.

  2. Heat oil in a large Dutch oven, then brown the beef rolls on all sides; remove and set aside.

  3. Add flour to the same pan and cook until light brown to create a roux. Stir in stock, wine, tomato paste, salt, and pepper; bring to a boil and simmer for 1 minute.

  4. Return the beef rolls to the pan, cover, and cook on low heat for 45 to 60 minutes, adding more liquid as necessary.

  5. Transfer the cooked rolls to a serving dish, remove toothpicks, and ladle the sauce over them. Garnish with sour cream and chopped parsley.
