Polish-American-Style Cheesecake (Sernik Philadelphia)

Instructions

  1. Preheat oven to 350 F.

  2. Combine 1.5 cups crushed graham crackers, 2 tsp sugar, 0.5 tsp nutmeg, 1 tsp cinnamon, and 4 oz melted butter. Press the mixture into a 10-inch springform pan and refrigerate for 30 minutes.

  3. Beat 3 (8-oz) packages softened cream cheese, 1 cup sugar, 3 large eggs, 1 tsp salt, and a dash of cinnamon for at least 5 minutes until smooth.

  4. Pour the filling into the chilled crust and bake for 40 minutes, or until only slightly jiggly in the center.

  5. Remove cheesecake, cool on a wire rack for 15 minutes, then increase oven temperature to 400 F.

  6. Mix 16 oz sour cream, 2 tbsp sugar, and 0.5 tsp vanilla. Spread this topping evenly over the hot cheesecake and bake for 5 minutes.

  7. Cool the cheesecake completely on a wire rack, then refrigerate in the pan until thoroughly cold. To serve, remove the springform ring, transfer to a plate, slice, and serve. Refrigerate any leftovers.
