Polish-American Breakfast Skillet
A savory Polish breakfast skillet combines leftover noodles, sausage, and potatoes with onions and eggs.

Preheat oven to 350 F.

In a large ovenproof skillet, if using fresh Polish sausage, remove meat from casings and cook with onion and peppers until the sausage is cooked and vegetables are tender. If using smoked sausage, slice into 1/4-inch pieces and steam with onion, peppers, and 1/4 cup water until vegetables are cooked, then remove cover, evaporate excess water, and add 2 tablespoons butter.

Stir in kluski or potatoes and heat thoroughly.

Add eggs, scramble on low heat, stirring until cooked as desired, and adjust seasonings.

Top with cheese and bake in the preheated oven until melted and bubbly.
