Instructions

  1. Preheat the oven to 350 F.

  2. Cream 8 oz room-temperature butter and 1/2 cup sugar until light and fluffy.

  3. Beat in 1 egg yolk and 1 tsp vanilla.

  4. Thoroughly incorporate 1/4 cup ground almonds and 1 2/3 cups all-purpose flour into the mixture.

  5. Shape walnut-sized dough pieces into crescents, place them on ungreased baking sheets, and bake for 20 minutes or until the edges are slightly brown.

  6. Roll the hot cookies in confectioners' sugar, then re-roll them once cool, and store tightly covered.
