Poha or Powa: Indian Rice Dish

A nutritious Western Indian snack, Poha, made from flattened rice, is simple to prepare for breakfast or brunch.

Instructions

  1. Wash poha in a sieve for 2 minutes and set aside to drain.

  2. Heat oil in a pan over medium heat. Add mustard seeds, curry leaves, and green chiles; fry until spluttering stops.

  3. Add onion and fry until soft and translucent.

  4. Stir in peanuts and potato; cook for 2-3 minutes, stirring frequently.

  5. Add drained poha and turmeric powder to the pan; stir well to combine.

  6. Cook for 1 minute, then remove from heat. Stir in lime juice.

  7. Garnish with chopped cilantro and serve hot.
