Poha Chivda
Poha chivda is a popular sweet and savory Indian snack featuring flattened rice, lentils, peanuts, and various spices, often prepared for sharing.

Instructions

Dry roast 2 cups thin flattened rice (poha) in a dry wok on low heat for 5-6 minutes until crisp and powdered when pressed.

Transfer the poha to a bowl, sprinkle with 1/2 teaspoon ground turmeric and 1/2 teaspoon fine salt.

Heat 1/2 cup neutral oil in the cleaned wok over medium heat until it shimmers.

Fry 1/2 cup raw peanuts until crisp and golden, then remove with a slotted spoon and add to the poha.

Separately fry 1/4 cup raw cashews, 1/4 cup daliya dal, and 1/4 cup dried coconut slices, adding each to the poha mixture when lightly toasted.

Fry 4 finely chopped Indian green chillies and 15-20 curry leaves until crispy, then add them to the poha.

Drain all but 1 tablespoon of the remaining oil. Fry 1 teaspoon raw sesame seeds, 1 teaspoon poppy seeds, and 2 pinches optional asafoetida until golden.

Return the poha mixture to the wok and gently fold all ingredients together over low heat for 2-3 minutes until the poha turns yellow.

Remove from heat, allow the chivda to cool, then mix in 1-2 teaspoons confectioners' sugar.
