Poached Peaches With Honey and Vanilla

Tender peaches are poached in a flavorful syrup infused with honey, vanilla, orange juice, and peach brandy.

Instructions

  1. Start boiling a pot of water and prepare a large bowl of ice water.

  2. Blanch peaches in boiling water for 10-20 seconds until skins split, then immediately transfer to ice water to cool and peel.

  3. Combine water, orange juice, peach brandy, sugar, honey, and vanilla extract in a saucepan and bring to a boil.

  4. Add peeled peaches to the boiling liquid, return to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until tender.

  5. Remove peaches with a slotted spoon to a bowl to cool completely.

  6. Boil the remaining syrup for approximately 10 minutes until reduced by half, then cool.

  7. Serve the cooled peaches warm with the reduced poaching syrup.
