Plantain Pancakes Recipe
Light and fluffy pancakes featuring ripe plantains are spiced with cardamom, cinnamon, and ginger, perfect with chocolate sauce or maple syrup.

Instructions

Preheat the oven to 200 F.

Peel and cut the plantain into small chunks.

In a blender, combine plantain, milk, eggs, butter or oil, vanilla extract, ginger, cardamom, cinnamon, baking powder, and sea salt; pulse for 30 seconds to 1 minute.

Add flour, blend, scrape sides, and blend again until smooth.

Pour batter into a bowl and let stand for 10 minutes.

Heat a greased non-stick pan over low-medium heat.

Scoop 1/4 cup portions of batter into the pan and cook for 2 to 3 minutes until edges set and bubbles appear.

Flip pancakes and cook for about 1 minute until browned; transfer cooked pancakes to the warm oven.

Repeat with remaining batter.

Serve pancakes with chocolate sauce, strawberries, and mint.
