Soak cedar planks for 1 to 2 hours while preparing a gas or charcoal grill for indirect medium heat (300 F to 375 F).

Combine olive oil, mustard, garlic, pepper, and salt in a bowl.

Place salmon steaks on the soaked planks, then spread the oil and mustard mixture evenly over both sides of the fish.
