Heat olive oil in a non-stick skillet over medium-low heat, then reduce to low.

Beat eggs with salt and pepper until combined, then add to the skillet, swirling to cover the bottom.

Cook, using a spatula to push cooked egg from edges to the center, until the omelet is almost set.

Spoon warmed tomato sauce, pepperoni, and shredded cheese over half of the omelet. Cook for 30 seconds.
