Instructions

  1. Heat olive oil in a non-stick skillet over medium-low heat, then reduce to low.

  2. Beat eggs with salt and pepper until combined, then add to the skillet, swirling to cover the bottom.

  3. Cook, using a spatula to push cooked egg from edges to the center, until the omelet is almost set.

  4. Spoon warmed tomato sauce, pepperoni, and shredded cheese over half of the omelet. Cook for 30 seconds.

  5. Fold the omelet in half and cook for another 30 seconds until the cheese is melted and heated through.

  6. Serve with optional fresh basil or parsley.
