Pistachio Nougat

Instructions

Line an 8x8-inch pan with foil and spray with nonstick cooking spray.

Combine sugar, corn syrup, salt, and water in a large saucepan; cook over medium-high heat, stirring until sugar dissolves, then continue to 250°F.

While the syrup cooks, whisk egg whites in a stand mixer until stiff peaks form.

Remove the 250°F syrup from heat, then slowly pour a quarter of it into the whisking egg whites, beating until the mixture holds its shape.

Return the remaining syrup to the stove; continue cooking over medium-high heat until it reaches 300°F.

Slowly pour the 300°F syrup into the egg mixture while beating constantly, continuing until thick and stiff.

Incorporate almond flavoring and green food coloring.

Beat in softened butter until the candy is thick and satiny.

Stir in nuts until combined.

Spoon the nougat into the prepared pan and press evenly.

Let set at room temperature, then cut into 1-inch squares.
