Instructions
-
Finely grind pistachios in a food processor, reserving a few tablespoons for garnish.
-
Add confectioners' sugar and salt (if using unsalted pistachios) to the processor, then process until a fine powder.
-
Gradually add egg white, pulsing after each addition, until the mixture forms a Play-Doh-like clump.
-
Optionally, knead in a few drops of green food coloring for enhanced color.
-
Roll marzipan into small balls and arrange them on a foil or waxed paper-lined baking sheet.
-
Refrigerate the marzipan balls for 10 minutes.
-
While the marzipan chills, melt chocolate or candy coating until smooth.
-
Dip each marzipan ball into the melted chocolate, place it back on the baking sheet, and sprinkle with reserved ground pistachios before the chocolate sets.
-
Refrigerate the tray of dipped candies for 10 minutes to set the chocolate.
-
Store the finished candies in an airtight container in the refrigerator for up to a week.
