Pistachio Marzipan

Instructions

  1. Finely grind pistachios in a food processor, reserving a few tablespoons for garnish.

  2. Add confectioners' sugar and salt (if using unsalted pistachios) to the processor, then process until a fine powder.

  3. Gradually add egg white, pulsing after each addition, until the mixture forms a Play-Doh-like clump.

  4. Optionally, knead in a few drops of green food coloring for enhanced color.

  5. Roll marzipan into small balls and arrange them on a foil or waxed paper-lined baking sheet.

  6. Refrigerate the marzipan balls for 10 minutes.

  7. While the marzipan chills, melt chocolate or candy coating until smooth.

  8. Dip each marzipan ball into the melted chocolate, place it back on the baking sheet, and sprinkle with reserved ground pistachios before the chocolate sets.

  9. Refrigerate the tray of dipped candies for 10 minutes to set the chocolate.

  10. Store the finished candies in an airtight container in the refrigerator for up to a week.
