Pinto Beans and Ground Beef With Rice

Instructions

  1. Prepare 1 1/2 cups of rice according to package directions; fluff and keep warm.

  2. In a large skillet, heat olive oil over medium heat. Add ground beef, onion, and carrot; cook until beef is no longer pink, breaking it up and draining drippings.

  3. Stir in bell pepper, tomatoes, tomato paste, green chiles, pinto beans, and seasonings.

  4. Bring the mixture to a simmer, reduce heat, cover, and simmer for 20 to 25 minutes.

  5. Serve the beans with the prepared rice, a green salad, and cornbread.
