Pinto Beans and Ground Beef With Rice

Prepare 1 1/2 cups of rice according to package directions; fluff and keep warm.

In a large skillet, heat olive oil over medium heat. Add ground beef, onion, and carrot; cook until beef is no longer pink, breaking it up and draining drippings.

Stir in bell pepper, tomatoes, tomato paste, green chiles, pinto beans, and seasonings.

Bring the mixture to a simmer, reduce heat, cover, and simmer for 20 to 25 minutes.
