Halve lemons, hollow them out, and place them cut-side up in a muffin tin.

Combine lemonade and gelatin in a pot; let the gelatin bloom for 2 to 5 minutes.

Heat the mixture on low, whisking continuously until the gelatin dissolves, 2 to 5 minutes, avoiding a boil.

Remove from heat, cool for 10 minutes, then stir in vodka and optional food coloring.

Pour the mixture into the lemon halves.

Refrigerate for 3 to 4 hours until firm.

Cut the set lemons into wedges and serve.
