Pink Grapefruit Granita Recipe

Instructions

  1. Start boiling 1 cup of water in a saucepan, then dissolve 1 cup of sugar. Reduce heat, add mint leaves and lime zest, and simmer for 5 minutes.

  2. Remove the syrup from heat, cover, and let steep and cool for 20-30 minutes.

  3. Strain the syrup into a bowl, discarding solids, and set aside.

  4. Extract 2 cups of grapefruit juice (pulp optional).

  5. Combine grapefruit juice with 3/4 cup of the mint-lime syrup in a bowl. Adjust sweetness by adding more syrup, or dilute with water for a milder flavor; the mix should be bold.

  6. Pour the mixture into an 8- or 9-inch square metal baking pan, cover, and freeze for 1 hour.

  7. Scrape the granita with a fork hourly, mixing frozen and liquid parts, until fully frozen with a flaky, snow-like texture (4-5+ hours).

  8. Before serving, fork the granita to fluff, then spoon into dessert cups and garnish with fresh mint.
