Pineapple Turnovers

Instructions

  1. Preheat oven to 400°F.

  2. Combine sugar, shortening, eggs, and vanilla; then mix in flour, salt, and baking soda. Refrigerate dough for at least 1 hour.

  3. Drain pineapple, reserving 1/2 cup syrup.

  4. In a saucepan, mix sugar and flour. Stir in pineapple, reserved syrup, lemon juice, margarine, and nutmeg. Cook for 5 minutes, stirring constantly, until thickened, then cool completely.

  5. Roll dough 1/16-inch thick on a floured surface and cut into 3-inch rounds or squares.

  6. Spoon 1 teaspoon of filling onto one side of each dough piece, fold, and pinch edges to seal.

  7. Place on ungreased baking sheets, brush with milk, and sprinkle with sugar.

  8. Bake 8 to 10 minutes until lightly browned, then immediately remove from baking sheets.
