Pineapple Tea Recipe

A refreshing spiced tea, made from repurposed pineapple peels and scraps, can be enjoyed either hot or cold.

Instructions

  1. Cut off and reserve the pineapple's base, top, peels, and core; separately cut the remaining fruit flesh.

  2. Combine the reserved pineapple base, top, peels, core, brown sugar, vanilla extract, cinnamon stick, and cloves in a large pot. Add 8 cups of water.

  3. Blend ginger with 1 cup of water until thick, then add to the pot, rinsing the blender with an additional 1 cup of water.

  4. Bring the mixture to a boil over medium-high heat for 12 to 15 minutes.

  5. Reduce heat to a simmer for 35 to 40 minutes, pressing on the skins halfway through to release additional flavor.

  6. Turn off heat, allow to cool completely, then strain and discard solids.

  7. Decant the liquid into bottles and refrigerate; serve hot or cold as desired.
