Pineapple Stuffing

A fluffy, slightly sweet pineapple casserole made with five ingredients, ideal as a side for pork or ham.

Instructions

  1. Preheat the oven to 350 F and butter a 1 1/2 to 2-quart baking dish.

  2. Using an electric mixer, beat softened butter and sugar for 3-4 minutes until light and fluffy.

  3. Incorporate eggs one at a time, beating after each, then beat in the salt.

  4. Fold the pineapple into the batter until blended.

  5. Gradually add and stir in the bread cubes.

  6. Transfer the mixture to the prepared dish and optionally sprinkle with 2 tablespoons of brown sugar.

  7. Bake for 55 to 65 minutes until puffy, lightly browned, and bubbly.
