Pineapple Jalapeño Margaritas Recipe

Instructions

  1. To make candied jalapeños, thinly slice one jalapeño. In a nonstick skillet, heat 1 1/2 teaspoons sugar and 1 teaspoon water over medium heat until lightly golden. Add jalapeño slices, cooking for 1-2 minutes until coated and deep golden. Transfer slices to parchment paper to cool.

  2. For the lime-jalapeño syrup, halve the remaining jalapeño. In a pot, combine it with 1/4 cup sugar, lime juice, and 1/4 cup water. Bring to a boil, then reduce heat and simmer for 2 minutes until the sugar dissolves. Cool completely, then discard the jalapeño pieces.

  3. Prepare the glass rims by mixing 1 teaspoon sugar, salt, and smoked paprika in a shallow dish. Moisten the rims of four rocks glasses with a lime wedge, then dip them into the spice mixture.

  4. Fill a cocktail shaker with ice. Add the cooled lime-jalapeño syrup, pineapple juice, tequila, and orange liqueur. Shake until well chilled.

  5. Fill the prepared glasses with ice. Divide the cocktail among the glasses, then garnish each with a pineapple wedge and a few pieces of candied jalapeño. Serve immediately.
