Pineapple Coconut Chess Pie

Instructions

  1. Preheat the oven to 400 F. Fit the pie crust into a 9-inch pie plate on a baking sheet. Line the crust with foil and fill with pie weights.

  2. Bake the crust for 10 minutes. Carefully remove the pie weights, then return to the oven for 3 to 4 minutes more, until the crust just begins to color.

  3. Remove the pie from the oven and reduce the oven temperature to 325 F. Combine all remaining ingredients and blend thoroughly.

  4. Set the oven to 350 F. Pour the filling into the partially baked crust. Bake for 35 to 45 minutes, or until the center slightly jiggles. If the crust edge browns excessively, cover it with a pie shield or foil ring.

  5. Cool completely on a rack, then chill in the refrigerator before serving with whipped cream if desired.
