Pineapple Chutney

An easy pineapple chutney that pairs well with grilled meats or as a condiment for Caribbean, Indian, or Asian cuisine.

Instructions

  1. Combine onion, honey, vinegar, pineapple, curry powder, ginger, salt, and red pepper flakes in a medium saucepan.

  2. Cook over high heat, stirring frequently, until the mixture boils.

  3. Reduce heat to low and simmer, stirring occasionally, until the pineapple is tender and the mixture thickens, about 20 to 30 minutes.

  4. Remove from heat, cool completely, then stir and transfer to an airtight container.

  5. Refrigerate for up to four days or freeze for up to three months.
