Instructions

  1. Marinate chicken with soy sauce.

  2. Combine pineapple juice, fish sauce, sugar, turmeric, coriander, and cumin to make the stir-fry sauce.

  3. Heat a wok or large frying pan over medium-high heat. Add oil, then stir-fry onion, garlic, chile, cumin seeds, and carrot for 1 minute.

  4. Add marinated chicken; stir-fry for 2-3 minutes until white.

  5. Crack in an egg, breaking it into small pieces while stir-frying.

  6. Stir in the prepared sauce.

  7. Add cooked rice, pineapple chunks, raisins, and peas. Stir-fry, breaking up any rice clumps, for 3-5 minutes until the rice is golden.

  8. Mix in cashews.

  9. Remove from heat. Taste and adjust seasoning with extra fish sauce or chile as desired.

  10. Serve topped with fresh cilantro.
