Pineapple Chicken Thai Fried Rice

Marinate chicken with soy sauce.

Combine pineapple juice, fish sauce, sugar, turmeric, coriander, and cumin to make the stir-fry sauce.

Heat a wok or large frying pan over medium-high heat. Add oil, then stir-fry onion, garlic, chile, cumin seeds, and carrot for 1 minute.

Add marinated chicken; stir-fry for 2-3 minutes until white.

Crack in an egg, breaking it into small pieces while stir-frying.

Stir in the prepared sauce.

Add cooked rice, pineapple chunks, raisins, and peas. Stir-fry, breaking up any rice clumps, for 3-5 minutes until the rice is golden.

Mix in cashews.

Remove from heat. Taste and adjust seasoning with extra fish sauce or chile as desired.
