Instructions

  1. Heat oil in a sauté pan or wok over high heat. Add chicken and half the garlic, cooking undisturbed for 3 minutes until browned.

  2. Stir the chicken to brown all sides, then incorporate diced onions. Cook until onions are softened and the chicken is thoroughly cooked.

  3. In a small bowl, combine cornstarch, ginger, red pepper flakes, and the remaining garlic, then whisk in soy sauce, broth, vinegar, and brown sugar.

  4. Pour the prepared sauce into the pan and cook for 2 minutes, or until thickened.

  5. Stir in diced pineapple and chopped bell pepper, coating them with the sauce. Garnish with scallions and cook for 1-2 additional minutes.

  6. Serve hot, optionally with rice, more scallions, and crushed peanuts or sesame seeds.
