Pikliz (Haitian Pickled Cabbage Relish)

A popular Haitian spicy slaw, Pikliz features shredded green cabbage, carrots, scallions, and onions, enhanced by a blend of lime juice, vinegar, and a fiery habanero or Scotch bonnet pepper.

Instructions

  1. In a large bowl, combine 4 cups shredded green cabbage, 1/4 cup grated carrots, 1/2 sliced yellow onion, 1-2 chopped shallots, 1 finely chopped Scotch bonnet or habanero pepper, and 2 sliced scallions.

  2. Optionally, add 1/2 sliced green bell pepper, 1/2 sliced red bell pepper, and/or 3 sliced radishes.

  3. In a separate bowl, stir 2 cups distilled white vinegar, 5 tablespoons lime juice, and 1/4 cup fine sea salt until the salt dissolves.

  4. Pour the vinegar mixture over the vegetable blend and let it sit for a minimum of 15 minutes before serving.
